Pre-workout bites

I like to workout first thing in the morning, and according to Dr. Stacy Sims, PhD women should have some protein for their nervous system when they wake, and also creatine to facilitate building muscle.

So, after years of intermittent fasting I started exploring what I could have (that wouldn’t feel heavy in my stomach) before my morning exercise, and I created these!

Ingredients:

75g (5 Tbsp) all natural peanut butter - I like Adam’s
1-2 medjool dates (pitted) - soaked in a bit of hot water for 1-2 minutes (to soften)
- save the water
25g (5 scoops) collagen powder
25g (5 scoops) creatine powder

20g dark chocolate - I use 99% Chocosol.
6g cacao butter

Instructions:

Combine peanut butter, date(s), and powders in food processor. Add enough of the date water to have it all combine well (eg. 1-2 Tbsp)
If the mixture is too soft to scoop, scrape into a small bowl and let sit in fridge for at least 1hour.

Once the mixture has solidified enough, spoon onto a plate or small tray covered in parchment paper - 5 somewhat equal ‘pucks’. I use a cookie scoop for this - no, I never do it in 5 smooth scoops! Using the backside of a spoon, smooth out into shapes that resemble cookies or pucks. **It doesn’t taste good yet, so don’t let the ‘batter’ turn you off - wait for the final product!
Place in freezer to solidify for a couple hours.

In the meantime, melt the chocolate and cacao butter. Cacao butter is not necessary, I simply find it makes a smoother coating. I do this by placing the pieces in a metal bowl and sitting it over a pot of near-boiling water.

When both elements are ready, place one ‘puck’ at a time in the chocolate - to coat the bottom and sides. Return to parchment and drizzle remaining chocolate over all the pucks. Freeze overnight.

Store in an airtight container in freezer.

When ready to consume, allow to sit at room temperature for a few minutes to soften.

Makes 5 bites/pucks/cookies.

The chocolate is totally optional, but it makes the final product less sticky while consuming… and it’s chocolate! 🙂
