A simple 2-ingredient salad, yet the combination with the dressing is so flavourful that I actually refer to this as my weak-in-the-knees salad!
1 bunch of curly kale
½ - 1 avocado (your preference)
2 garlic cloves, minced
2 tsp minced fresh ginger
¼ tsp powdered mustard
Juice of ½ lemon
2 Tbsp apple cider vinegar
2-4 drops stevia natural sweetener
½ cup water
1/3 cup Braggs liquid aminos
Salt and pepper to taste
Combine all dressing ingredients in a blender.

Tear kale leaves from stalk; rinse & spin dry. Chop into desired size and place in bowl.
Pour desired amount of dressing on to kale and massage it in to leaves with your hand. *This is essential for softening the tough kale.*
Cut avocado in half and scoop meat in to bowl with kale. Use your hand again to massage it all together.
