These tasty treats are similar to my Peanut Butter Cup recipe, however I came up with this combination specifically for my brother-in-law who loves commercial mint cups but won't eat them because of the sugar content.
As these ones I have created are raw, mineral-rich treats, he's all over them!
Start with making a batch of my Healthy Chocolate (hold the spices). Pour the liquid chocolate in to a squeezeable dispensar (such as the honey bear we used).
1/2 cup raw cashews - soaked in water for at least 4 hours
1/4 cup macadamia nuts (or simply more cashews) - soaked in water for at least 4 hours
3 Tbsp honey - this is the sweetest I would want it. Will likely reduce this next time.
1/4 tsp sea salt
1/2 tsp pure vanilla extract
80ml coconut oil - melted
12 drops pure essential oil of peppermint
- if using peppermint flavour experiment with amount, starting with 1/4 tsp
Combine above ingredients in food processor and blend well, until smooth. With machine still running, add peppermint drops. Let blend for additional 15 seconds. Sample the mixture for taste; the peppermint should be rather intense as there will only be a small amount in each cup; add more if desired.
Transfer to a squeezable container.
Building the cups:
Squeeze out a small layer of chocolate in to each empty mould. Then put in refrigerator until set. ~10minutes.
Remove from fridge and add a small dollop of the cashew-mint mixture to each base.
Cover with a 2nd layer of chocolate, until mint layer is covered. Return to fridge until fully set. ~30minutes
For best consistency, keep chilled as the chocolate will melt at room temperature.
